Halloween Cookies on a Stick

    Linda Stahl, Director of the Hershey’s Kitchens, shows you how to make Halloween Cookies on a stick.

    Linda Stahl: Hi, I am Linda Stahl Director of the Hershey's Kitchens. Today we're going to be making Halloween Cookies on a stick. The ingredients we'll need are, 1 cup 2 sticks butter or margarine softened. You want to have softened butter.

    We're going to add the 3 quarter cup granulated sugar, and the three quarter cup brown sugar. Beat these and if my butter is soft enough, these two will easily beat into that. And what we're doing is mixing all these ingredients together, getting some air beating into the butter so that your cookies are going to be nice and fluffy.

    So at this point, I'm going to stop and I want to add my eggs. You always want to break it into another container first. I am going to add 1 teaspoon Vanilla extract and now mix this. Scrapping down to sides occasionally and you want to mix this thoroughly.

    Take like 2-1/2 cups of all-purpose flour, stir my dry ingredients together. Take like 1/3rd cup Hershey's Cocoa, and like 1 teaspoon baking soda, 1/2 teaspoon salt. Stir your ingredients together. This again helps with even mixing. I am going to add part of the ingredients, again, start out slowly so that you don't have your flour and everything just flying out of the bowl.

    Scrapping down the bowl occasionally, add some more. I'm going to speed up the mixer, just a little bit as the dough starts to get little firmer. And I am going to add the last bit of my flour. And as you can see this is starting to get very tough to work through, that's what the cookie dough is like.

    When this is finally mixed together, you can see it's pretty thick. You can kind of mold it in your finger just a little bit. I need a scant 1/4 cup. I am going to take this dough and put it on my pan like that. You can probably do about six on a sheet, but you want to try and having about the same size because that way they'll bake. You want to pick them up and just kind of shape them into balls like that. Take your wooden Popsicle stick, put it in about half of the way into the dough and flatten it slightly and what you need to do is kind of alternate the way that you put your sticks in here so that they're not hitting each other.

    And there we are, we're ready to bake. So now we're going to bake these cookies at 350 for 10 to 12 minutes or until set. These are finished, so we'll take them out of the oven. Let them cool for 3 minutes and then remove them from the cookie sheet to wire rack so they can cool completely.

    I've already gone ahead and done 4 of these, but I'm going to show you how we do it. What I am using is Royal Icing, that is a icing that becomes very, very hard when it dries. It's a combination of powdered sugar, Meringue powder and water. I have tinted mine, orange, green, brown, and some white.

    I'm going to start first by putting a set of ice on my palm. Again, I am going to pike the center, giving two circles. I'll flip over to the white, a little bit of white in the center and then top off with the brown. And that forms the pupil of your eye. And now I am going to put on rest of my facial features, a dot for the nose.

    These are going to give a great big smile, which I'll go back, use my green and put a nice stem on there. So our cookies are decorated. Here they are. Let's go ahead and try one, really chocolaty. That's how you make Halloween Cookies on a stick.
