Amy Riolo: Even though aioli sauce sounds fancy, it's actually just a garlicky mayonnaise. Making homemade aioli is quick and simple and the result is a smooth, creamy and satisfying sauce. To start, you want to beat your two garlic cloves, two egg yolks, one half teaspoon Dijon mustard and one teaspoon of white wine vinegar together in a medium sized bowl or food processor.
Aioli is a traditional Mediterranean topping that dates back to Phoenician times. Then blend in a half cup of extra virgin olive oil just a few drops at a time, whisking well after each addition, until the aioli sauce is thick and smooth.
Season this with salt and pepper to taste and then you are ready to serve. So, here we have our smooth buttery aioli sauce. Perfect to slather on hot bread or uses a dip for crudits. Enjoy!
