How to Make Fire Roasted Salsa and Mango Salsa

    Javier Quiroga: Hello, I am Javier Quiroga with To Your Taste Catering and today I am going to show you how to make some delicious dishes for a Latin fiesta. Right now, I am going to show you how to make Fire Roasted Salsa.

    The ingredients we are going to needing for this wonderful dish is 1 tomato, about a quarter of an onion, you are going to need 1 lime, a little bit of cilantro, about a tablespoon. We are going to need some salt, pepper, a little bit of olive oil and a little mango that's what we will seek a little later on.

    The tools you are going to be needing are going to be a nice sturdy cutting board, a sharp knife, a fork and a spoon for mixing. So let's get started. What we are going to do here is we are going to roast the tomato. You can do this either on your stove top or you can do it on your grill. The way I am going to do right now is just grab the tomato and just put it right on the fire, just like that. You just let that cook for a little while until it really becomes charred, almost burnt because we want to have that burnt taste to it and the flavor to it.

    You want to set this, probably like, at a medium to medium-high heat where you do want the flame to touch the tomato. If you don't have a gas stove top, you are going to have to do it in your grill or just have the regular salsa. While the tomato is cooking over there, we are going to get one Persian lime, squeeze it a little bit, you can do this by hand, you can put a fork in it to try to squeezing it. So some people do it like that, it will be much easier. With one, it should be more than enough for that.

    We are going to chop our onion as well, like that. You are going to be making this for about 4-5 people that you are going to be serving. So about a quarter of an onion is more than enough. Our tomato, do you hear it? You see how it's searing here on the outside? That's how you want the whole tomato to be, sear like that. You want to adjust your flames, so you can have the flame hitting the tomato all the time. That way you can get that done.

    Then you are going to need a little bit of cilantro, like that. Then you just rough chop on that. This further is going to take about 5 minutes and do want to keep an eye on this. You don't want to just walk away, you want to keep an eye as you don't want to cause any fire or anything else like that. It's perfectly fine to just be right on the flame, causing any other problems or anything like that, but you do want to do this for a while. What this is also going to do for your salsa? It's going to give it a really nice color. See the way I am going to do it, now I want to turn the heat up a little bit more. So we can get a better sear on the outside of that tomato.

    At this time, our tomato has been on the fire probably for about 5 minutes now and it looks like that. See, and it smells really, really good. What you want to do is you want to let this cool for a little while because you don't want to burn your hand. We will let that cool for about maybe 10-15 minutes. Once your tomato is cool, which is not enough now because there's smoke, but I will show you guys. You want to take the top part off. The one that has the stem on it, you don't need that. Then you can just basically chop the tomato. You will notice that it's much easier to just chop, it's much softer.

    Alright, so this is your salsa here. Now we are going to plate our salsa, put in a nice bowl like that. There you have it, you have your fire roasted salsa. You can serve this also with some tortilla chips, in this case, some fresh flour tortillas that I cut into some triangles. It's ready to be eaten, enjoy.

    Another way you can make the salsa is just the regular traditional way. Just cube your tomato, you are going to add your onion to that and your cilantro, same situation you did here, a little bit of lime, a little bit of salt and pepper on there.

    Then we are going to make this a little bit different by adding a little bit of this chopped mango that I chopped before. Just add that in there and it gives the salsa just a wonderful, wonderful flavor. There you have it, we have a salsa with mangoes which is very, very delicious.
