Sheilah Kaufman: Hi, I am Sheilah Kaufman, Cooking Teacher, Cookbook Author, Culinary Lecturer, and Food Editor. Today I'm going to show you how to make Lemon Ginger Cookies. We're using Canola oil which is heart healthy, and has a very high smoke point, and is very versatile for cooking, baking, frying, anything you would need a good oil for. These are the ingredients you will need.
So we're going to start by taking 3/4th cups of canola oil. Now, we're going to mix the oil with the sugar. Now, we're going to add 1/8th to the 3/4th cup canola oil and the cup of sugar that we've been beating. When the eggs incorporated, we're taking 2 teaspoons of lemon extract and the zest of one lemon.
Now we're going to whisk together 2 cups plus 2 tablespoons of flour with pinch of salt, just put a little pinch in, 2 teaspoons of ground ginger, about 3 tablespoons maybe 4 of crystallized ginger candy. That's the best part. And once this is well mixed together we're going to add it to the flour.
Now, you may or may not know that whenever flour is added in a recipe it's usually the last ingredient and it's added on the lowest speed, because if you over-beat the flour, your cake or your cookies aren't going to rise. I'm going to add this in bat cheese. I'm going to take the spatula, scrape all the flour down back into the mixer and add some more.
We're going to make the balls about the size of walnut. So you're going to take them in your hands, and you're just going to roll them, put them on the cookie sheet. They'll be very moist. When you cook with canola oil, you get very nice moist product with a soft texture. And put them about an inch or two apart, because they are going to expand while they bake.
Now when you finish shaping all your cookies, we're going to take a fork, and just run it through confectioner sugar and very gently just press lightly on the top of the cookies. Now you can use regular granulated sugar if you want to. Now, we're ready to bake. These are going to bake at 350 degrees for about 13 minutes.
You might want to check on them after 10 minutes. The way to tell these cookies are done is to check the bottoms. If the bottoms are golden brown the cookies are ready. The cookies are done. They look beautiful, lightly browned on the bottom. It's time to eat.
