Chef Tom Papoutsis demonstrates a baked chicken recipe with a dry rub.

Tom Papoutsis: Hi! I am Tom Papoutsis. Today, we are doing chicken basics and we are going to start working on what's known is a dry rub. We are going to start out, we are going to put some salt in a little bowl here, enough pepper to give us some good flavor, mix that around. I am going to use enough garlic here to give it a good garlic flavor. This, has these little granule pieces of this onion, okay. Onions are another good flavor, that's going to -- we want to come through.

Now here is the kicker. This is chipotle seasoning. It's a chipotle chili pepper that's ground. This rub is going to be a chipotle rub. I want to kind of grind this up a little bit, so I am going to use the flat part of the spoon and we are going to kind of mix it up and that's how simple the rub gets. And now we are going to bake our chicken.

Now whenever we are baking chicken, the first thing we need to do is preheat our oven. I have got my over preheated to 400 degrees, what we are going to do is we are going to get this chicken coated with this tub, get it coated real good and I am just going to kind of pat it, rub it. I am going to go over to sink to wash my hands and then we are going to come back put it in our preheated oven and we will show you the finished product.

Okay, it's been about an hour, our chicken that we put in the oven to bake is actually done; we are ready to pull it out. And there is our baked chicken.
