Roxanne Moore: Hi! I am Roxanne Moore with Sodexo and with me is Tyler, and together we are going to be making a kids' favorite meal, macaroni and cheese. Do kids like mac and cheese?
Tyler: We love mac and cheese.
Roxanne Moore: All kids love macaroni and cheese. So today what we are going to be doing is walking you through how to make macaroni and cheese from scratch; this isn't coming from the box. And as we go along, we will be showing you alternative ingredients you can use that are lower in fat and sodium. Tyler: So first we have to preheat the oven to 375 F. Next, clean a baking dish with cooking spray. Then cook 8 ounces of macaroni noodles in a large pot of boiling water, until just tender.
Roxanne Moore: I make sure to drain it in a colander and rinse with cold water. You can also use whole wheat pasta for a healthier option or even gluten-free pasta.
Tyler: Next, we need to heat three-quarter cups nonfat milk in a large saucepan over medium heat until steaming. While Ms. Roxanne is doing that, I will whisk together one tablespoon flour and another quarter cup of milk Roxanne Moore: I will stir that in and keep whisking until it's smooth and thick.
Tyler: This will take about 2 minutes. Now remove the milk mixture from the stove, and I will stir in the pureed cottage cheese, one cup shredded cheddar cheese, a quarter teaspoon of nutmeg, 1/8 teaspoon of cayenne and salt and paper. Then we stir in the cooked macaroni noodles. Now, we can spoon the mixture into the baking dish and sprinkle with Parmesan cheese and breadcrumbs.
Roxanne Moore: The macaroni and cheese needs to bake until bubbling and brown, which is about 35 minutes.
Tyler: You can add to that other vegetables like broccoli.
