    Chef Davide Megna demonstrates how to make lasagna from scratch.

    Davide Megna: Hello, I am Davide Megna from Amici Miei Ristorante in Rockville, Maryland. And today I am going to show you how to make Lasagna. So we are going to start from making the pasta dough. We take enough flour, 2 pounds of all-purpose flour; were going to make a big hole in the middle. And Im going to drop ten whole eggs, pinch of salt and some extra virgin olive oil. Then Im slowly going to break the eggs and then incorporating the flour. And now Im going to work the dough until I reach smoother dough.

    Now Im going to show you how to roll our dough into pasta sheets. I am using pasta rolling machine. If you dont have a machine, you can also do it by hand by using rolling pin. So Im going to cut a piece of our dough putting some flour on it and then Im going to start rolling the dough by adding a little bit of flour every time getting the sheet very, very fine. So Im going to put the pasta sheets into a tray with parchment paper underneath and some semolina flour.

    And right now we are going to prepare our Bolognese sauce. We start with chopping half -- a big onion, big pieces, some celery, about half a carrot and a couple of cloves of garlic, were going to put all these vegetables inside a food processor. And then I am going to make a little bunch of sage and rosemary tied it all together with a twine. Turn our pot on, pour some extra virgin olive oil into the pot and fry the vegetables for a couple of minutes.

    After that we are going to add 2 pounds of ground beef, cook it until it gets brown. And now that we finally browned our meat, were going to pour a glass of red wine, were going let it evaporate add our bunch of herbs and we are going to pour in Italian peeled tomatoes. Were going to let it simmer for about an hour to an hour and a half, add salt and pepper and then itll be ready to make Lasagna.

    Next, I am going to show you how to make bchamel sauce. We start boiling about a coat of a whole milk and at different pot start melting, 4 ounces of butter, were adding some salt and pepper to our milk and also a little bit of nutmeg. We can start pouring 4 ounces of flour and once the milk start boiling we can add the milk use your whisk and move it very quickly and thats how you make bchamel sauce and next Im going to show you how to cook our pasta for the lasagna.

    I have a boiling water with salt, I am going to add a little bit of oil, since its a fresh dough itll cook very, very quickly, so in a couple of minutes itll be ready. Stop the cooking putting in some ice water. And right now Im going to show you how to put together Lasagna after we cook all the sauces and the pasta.

    Start with the Bolognese sauce at the bottom layer our pasta, bchamel sauce and some Bolognese. Grate the parmesan cheese one more layer of pasta, bchamel and some Bolognese sauce, some more cheese one more layer of pasta, bchamel, Bolognese parmesan, one last layer of pasta. Okay, one last sprinkle of a parmesan cheese. And right now Im going to put it in the oven for about 400 degrees for about 25 minutes. And thats how you prepare your lasagna.
