Chef Bobby Stoky: Today its onion-crusted yellowtail snapper with fresh mango salsa. Its all about the fish for this dish.
The fish is great but the ingredients are amazing.
We start with homemade onion rings and panko bread crumbs. They dont soak up much oil so the fish tastes crispy.
Pad the fish in flour, deep it in the eggs, roll it in the panko bread crumb mixture and fry it up.
Top it with key limes and butter.
Thats right, Key-Lime-Butter! Its tart, its rich to die for. Throw on some incredible mango salsa.
