Roxanne Moore: Hi! I am Roxanne Moore with Sodexo and with me today is Jocelyn and together we are going to show folks how to add some vegetables to their diet in new and creative ways. Vegetables are really important because they help to prevent certain diseases like heart disease and cancer. So Jocelyn, what is it we're going to be making today?
Jocelyn: Today we will be making Tuna Boats and Spinach Salad. Roxanne Moore: That sounds like the perfect lunch to me. Jocelyn: Our 2 large cucumbers have been washed, peeled and cut lengthwise. Now scoop out the inside of the cucumber. Next, mash 1 can of white beans with a fork. Then add 2 chopped green onions, 1 can of low sodium tuna, 1 tablespoon of canola oil, 1 tablespoon of Dijon mustard, 1/4 teaspoon of brown pepper, 1/2 a teaspoon of salt, lemon zest, and 2 tablespoons of lemon juice. Then mix it all up with a fork. Now fill each cucumber with the tuna mixture and that's it. Roxanne Moore: Wow, what a great alternative to the traditional tuna sandwich! You could even add some diced peppers, or carrots, or even celery for some additional crunch. So let's go ahead and make the spinach salad to go along with our tuna boats. Jocelyn: This is really simple. Mix together baby spinach leaves, 1 diced apple, 1/2 a cup of raisins, 1/2 a cup of toasted almond slivers, and some prepared salad dressing of your choice; I like herb dressing. Then you will toss all the ingredients together.
Roxanne Moore: What a great sight to go along with our tuna boats. Now, if you are not a big fan of apples, you could also substitute mandarin oranges in their place.
