Hi, my name is Nicole Ferrigno. I will be joined today by Elizabeth Evelyn and we are from Paisley Fig Pastry. Today, we are going to show you how to bake and decorate holiday inspired cookies from scratch that are both beautiful and delicious. We will first make a super fun stained glass Christmas tree ornament cookie, then a beautiful, delicate gingerbread snow flake and finally, a chocolate peppermint sandwich cookie. You need a couple of pieces of specialty equipment to complete these really fun cookies including a stand mixer, a rolling pin, a baking sheet, a few shaped cutters including a small, round cutter about the size of an Oreo cookie and a couple of festive holiday cutters such as Christmas trees, snowman or snow flakes. You also need a small offset spatula, a disposable or a reusable pastry bag that s fitted with a pastry tip, either plain or star shaped. So, before we begin a little bit about kitchen safety. When you are working around hot ovens and sharp knives, it s just very, very important to be cautious and aware of what you are doing and clearly, if you are working with small children in the kitchen be sure that they are supervised.
