Jim Davis: Hi, I am Chef Jim Davis for Harris Teeter. I'm going to show you all the different ways to cut and slice eggplant.
How To Prepare EggplantI'm going to show you how to get rid of that bitter part of eggplant. First of all we peel it and then we do a dice by cutting it into slices. Then we cut it into small chunks. After we cut those small chunks, we put them in a small colander, spring them lightly with salt, let them set about 15 minutes, and there is all the bitter part of the eggplant. It's all drained out.
How To Slice EggplantSimply take this, cut off the end to remove the hard bitter end, and then typically your recipe going to call for eggplant to be cut into about a half inch slice. Using a sharp knife cut it crossways and that's how you slice an eggplant.
How To Dice EggplantFirst, we're going to peel it using a just a little Y yolk peeler and right off you peel it and then get rid of that ugly old dark peel. Cut off the end. I want to slice it, and just slice it about a half an inch thick. Then taking each slice, cut it into half inch wide strips, and then we turn it crossways and simply cut it off in a dice we want. And typically eggplant is going to be diced into about a half inch dice.
