Jim Davis: Hi there, Chef, Jim Davis here for Harris Teeter. I am going to show you now how to slice a roasted pork loin. This is a loin roast, about 21/2 to three pounds. It has been roasted until it was to a 160 internal temperature. And we are going to slice it, nice quarter-inch slices with our slicing knife, like this that has a small scalloped edge on it, gives you a very smooth cutting. Now look how nice and smooth those slices are, look at that. And that is how you slice a pork loin roast.
