How To Make Auntie Anne’s Soft Pretzels

    Pretzel maker Jay Stewart demonstrates how to make a classic Auntie Anne’s style soft pretzel.

    Jay Stewart: Hi I am Jay Stewart; I am from Auntie Anne's Pretzels. I am going to show you today how to make your on soft pretzels in your home. The first step is you are going to take 1 and a quarter cup of water at 105 degrees and you don't want it to get too hot otherwise it won't activate the yeast.

    Now we are going to take 1 tablespoon of dry active yeast, lightly sprinkle it. You are going to pour the pouch of our at home pretzel mix, you are going to take 1 teaspoon of vegetable oil and put it right on top. You are going to start to mix; you want to get it altogether. This is where I get my work out. We are going to place it on our counter and do this on your kitchen counter at home. Coat it with the little bit of flour and we are going to continue to knead until we get a smooth dough that we will then allow it to rise 45 minutes. Lightly spray with non-stick spray and we will place our dough with a warm damp towel and we will give it about 45 minutes to rise. So what I am going to do is now I am going to cut my dough strip. Cut it one, one and a half inches wide, 7-8 inches long. Start inward and start rolling out and kind of lightly stretching it as you roll until you get the dough just about an arms length, there about to form a U on your counter and then you take the toes the ends and then just fold them over once, and then fold them again twice. Wrap them around and then bring the toes down and you want a couple of inches are apart from each other to get the nice pretzel shape. And then pull the tops separate it a little bit so you get a nice V at the top, and the result is a pretzel made for baking. I have pre-heated my Owen to 450 degrees. I have lightly sprayed my cookie sheet with non-stick cooking spray. I have a 1/2 a cup of baking soda poured into a small mixing bowl, with 4 cups of hot water. You are going to grab your pretzel by the toes, completely submerged in your baking solution and then blot the bottom side on your absorbent towel and then place on your cookie sheet. And I am going to lightly salt 3 of my pretzels. I am going to leave 3 of my pretzels unsalted as I will make those cinnamon sugars. I will put the pretzels in the Owen on the center rack approximately 5 minutes. At 5 minutes, you want to rotate the tray and continue for 2-5 minutes until the pretzels are golden brown. I have a quarter cup of melted butter along with the cinnamon sugar. I am going to take a non-salted pretzel completely submerged it, face down in the melted butter, give it a couple of good shakes and then I am going to put it face down in our cinnamon sugar. At this point this is where it gets a lot of fun. Just go ahead and give that a couple of really good shakes and voila Cinnamon sugar pretzel! Now take the salted pretzel lightly dip the face only of the pretzel, give it a couple of good shakes, let the excess butter run off, back into your bowl and there you have soft pretzels in a comfort of your own home.
