Amy Riolo: Today, I am going to show you how make a carrot, date and orange salad. It's a Moroccan favorite that's easy, beautiful, and delicious. We'll begin by placing some carrots right on top of our bed of lettuce. These are carrots that have just been graded. You can just scatter them right along the top. Then we'll add our dates. These are dates which we've pitted and just cut in half. You can use any kind of the dates that you like.
Next, I am going to scatter some orange segments and these are just pieces from one orange. You can use blood orange, navel whatever you prefer, tangerines, and you can put as many as you like. And finally we'll make our vinaigrette. I have the juice of one lemon, which I'll mix with the juice of an orange and the secret ingredient is a Moroccan favorite, it's orange blossom water. I am just adding a teaspoon. You can add as much as you like.
I am going to whisk everything up. And as soon as those are whisked together, I can add in my olive oil. I am just going to whisk really quickly, but I am going to add the olive oil slowly. This will help for everything to incorporate and for the dressing to be nice and thick.
Once everything is mixed together, I am just going to give it a pinch of black pepper, so we can just top it with our vinaigrette. So, here we've our carrot, date and orange, salad, the perfect salad to add Moroccan flavor to any meal. Enjoy!
