Chef Evelyn Paul demonstrates how to make a hassle free dinner with this chicken cordon bleu casserole recipe.

Chef Evelyn Paul: Hi! I'm Chef Evelyn Paul with Kroger, and today, we're going a little retro, we're making a Chicken Cordon Bleu Casserole. My oven is heating to 400 degrees and I'm going to just prep my baking dish with a little bit of nonstick cooking spray. Let's set this to the side.

And then I'm going to assemble my casserole. I'm going to start with one cup of reduced fat sour cream, one-and-a-half cups of reduced sodium chicken broth, one tablespoon of Dijon mustard. Then I'm just going to add a quarter teaspoon of ground black pepper. And then I'm going to whisk all of this together so it's well-blended and really smooth, so you have that nice creamy mix.

I'm going to continue to build my casserole by adding the grilled chicken breast. I have 20 ounces of fully cooked grilled chicken breast diced, six ounces of cubed Swiss cheese. One-and-a-half cup of uncooked instant white rice, half a cup of diced ham, and finally, I'm going to add some frozen green peas. You don't have to, but I try to put vegetables in my meals as much as I can, and it's a good way to get the kids to eat more vegetables. So I'm going to add one cup of frozen green peas to my mixture and then I'm going to mix this all and gently stir everything together. So when you layer this into your casserole dish, you have chicken, you have cheese, you have ham, you have peas, all of these great flavors just blend together.

Now that my casserole is evenly mixed, I'm going to assemble my casserole in my prepared baking pan. I'm using individual baking pans, but you can use a larger one. I just like to give everyone their individual casserole. I'm going to plate this into my baking dish in a nice even layer.

Now that my casserole is assembled in my baking dish, I'm going to make my topping. I have one cup of crushed cornflakes in this bowl. I'm going to add to that half a cup of grated Parmesan cheese, and then to that I'm going to add two tablespoons of melted butter. I'm just going to mix this all in. Sprinkle a nice even layer on the top of the casserole, so it's nicely coated, nice, even layer. So you've that tanginess of the cheese, the crunch of the cornflakes.

So my casseroles are ready to go. I'm going to bake them in 400 degree oven for 25 minutes till they are nice and bubbling with a nice golden brown crust.

So now that my Chicken Cordon Bleu Casserole has cooked for 25 minutes, you can see it's got that beautiful golden crust on top. So now it's time to dig in and enjoy.
