Amy Riolo: Chicken noodle soup is a great recipe to keep you warm during the winter months. If you've never made homemade soup before you'll be surprised at how delicious and easy it can be.
First, we'll heat 2 tablespoons of olive oil over medium high heat and a larger sauce pan. Then we're going to season a pound and a half of chicken with salt and pepper.
I have cut my chicken into 2 inch pieces and we can go ahead and add it into our oil. So we're going to cook the chicken for about 2-3 minutes just until it gets a little bit of golden brown color on it and it's really seared on the edges. This will help it to retain its moistness.
So, now that our chicken is finished browning, I'm just going to transfer it over into this dish. Now, I'm going to add 4 peeled and sliced carrots and one large onion that's been diced into my pan.
Now, I'm going to season my vegetable with a pinch of salt, a pinch of pepper then I'm going to add in a tablespoon of poultry seasoning and a teaspoon of ginger.
Next, we'll return the chicken breast to the pan and cover with two cups of stock. Now, we'll increase our heat to high and bring this to a boil. Once our soup is boiling we can reduce the heat to medium low, cover it and allow it to simmer for about 20 minutes or until the chicken is coked through and the vegetables are soft.
So our chicken soup has been boiling for about 20 minutes. I'm just going to add in about a half of a cup of soup noodles or vermicelli noodles. I'm just stirring everything together, then we can let it simmer for just a few more minutes, maybe three or four minutes until the noodles are cooked through and then we're going to garnish with our fresh parsley.
