Amy Riolo: My chickpea tomato and tahini salad is perfect for picnics and buffets. The first thing we can do is combine our chickpeas with our tomatoes and parsley in a bowl; then I've got some grape tomatoes that I just halved. If you wanted to you could use cilantro or really any other herb in this mix.
And then it's time to make our tahini sauce. And the first thing I am going to do is stir the lemon juice right into the tahini. This is an important stuff if you plan on making a lot of hummus or baba ganoush at home is to know how to make your own tahini sauce. The homemade tahini sauce is great on calamari, fish or a lot of different things.
I am going to season it with salt and pepper. Then we'll thin it out with some water. You just want to add a little bit of water at a time and whisk to incorporate the way that you would a vinaigrette. And in our salad this tahini sauce is going to actually be our vinaigrette.
But you could serve tahini on its own with peter bread, you could add it into chickpeas in a food processor to have hummus, or you can add it into roasted eggplant to have baba ganoush.
So whenever you make tahini, always make a big quantity, because it goes a long way. Well, this is the consistency that you want, something that looks like a dressing, but instead of being made with mayonnaise, it's made with tahini. So you don't have to worry about it spoiling in the sun.
Now we can just pour that right over the top. We can just stir to combine all of the ingredients together. Make sure that everything is coated really well with that delicious tahini sauce. And there we have our chickpea tomato and tahini salad, perfect for a picnic or any occasion, enjoy!
