Eleisha Ensign from TexaSweet Citrus Marketing demonstrates how to make a cowboy caviar with grapefruit.

Alicia: Hi, I'm Alicia with TexaSweet Citrus Marketing. I work with the growers of Texas grapefruit and oranges. And today I would like to talk with you about the Rio Star Grapefruit. This grapefruit is grown in Texas and is a very red sweet variety of grapefruit that is perfect for all types of recipes.

Today I would like to show you a really simple delicious appetizer Rio Star Cowboy Caviar. So first you want to start with two tablespoons of Rio Star Grapefruit juice, add to that two teaspoons of hot sauce, nice pick, one-and-a-half teaspoons of olive oil, then we want one garlic clove, minced and a little dash of black pepper. Then we want to add to that one ripe avocado and one can of the Cowboy Caviar. This is one can of the black-eyed peas, drained and rinsed, and one can of corn drained and rinsed as well, and two-thirds cup of green onions and two-thirds cups of cilantro. I love cilantro.

Then I want to add to that a half of cup chopped Rio Star Grapefruit. Super simple, really delicious, and grapefruit is very healthy for you too. A half a grapefruit has only 60 calories and 100% of your Vitamin C. Rio Star Grapefruit is available October through May. So enjoy this delicious appetizer at your next holiday party.
