Amy Riolo: Hi! I am Amy Riolo with Harris Teeter. It's hard to find good Gluten Free snakes, my cranberry nuts bars are perfect portable treat. I'm going to began preheating my oven to 350, and then we can start mixing our batter. I am going to add 2 Cups of buckwheat flour, then I am going to add 2 Cups of our all-purpose gluten-free baking mix, 2 tablespoons of aluminum free baking powder, (1/2) half a teaspoon of salt, and 1 teaspoon of cinnamon, we will just stir this to combine.
Once our dry ingredients are combined, I can go ahead and add my milk, I have got 2 cups. You can use soymilk, almond milk, whatever you prefer. Now add in a Cup of Unsweetened Apple Sauce, this give us some a little bit of body and some more flavor as well as serving a fruit. And I have two Eggs that I have already beaten, teaspoon of gluten free vanilla, and a cup of honey.
So now I am just stirring everything to combine. You want to make sure to get everything from the bottom. Now we're going to add in 2 Cups of dried cranberries. Now I am going to prepare by pan, I am just going to spray it with some of my baking spray. And then that's you can two different ways, you can stir them in now or you can scatter them on the top. And we can just spread our batter right into the pan. We can scattered the remaining almonds right on the top.
So now we can put this into the oven, we are going to bake them for approximately 45 minutes. So our cranberry nuts bars have been baking for about 45 minutes and they are ready to take out of the oven. Now we can let this rest for at least 10 minutes and then we will serve them.
