Amy Riolo: It takes a lot of energy to keep up with today's busy lifestyle. Between balancing work, family, friends and activities, people are often looking for something to help keep them going. Many people are turning towards healthful plant-based proteins to give them the energy that they need to last throughout the day.
Today, I am going to show you how to make a delicious recipe from the National Peanut Board called Crispy Peanut Kale Chips. First, we'll pre-heat our oven to 400. Next, we'll take a 10 ounce bunch of curly kale. All of the stems have been trimmed from it. Rinse it under cold water, and then pat it dry. You can use a salad spinner for this as well.
Now the next thing that I am going to do is coat my baking pans with some cooking spray. Next, we're going to combine a half a cup of ground unsalted peanuts right onto a sheet of wax paper, and then we'll add a quarter of a cup of ground flaxseed, this is regular flaxseed that you get at the supermarket, that's been ground.
We'll add in a half a teaspoon of low sodium jalapeno or chipotle seasoning, and a pinch of salt, and we can just combine these together, and this is the coating for our delicious kale chips.
Let's whisk together two egg whites just until they are frothy. This is going to become the binder for coating on the chips and this usually takes about 10 seconds.
Now we'll take kale leaves and dip the edges right into the egg whites, and once they are coated, we can go ahead and press them into our peanut mixture, place these on our baking sheet, and we'll make sure that we'll spread them out, so that they're not touching. Give our kale a light coating of cooking spray.
Now we'll transfer these into our preheated oven and we'll bake them for 10-12 minutes or just until the kale is crispy and the peanuts are golden.
Our crispy peanut kale chips have just come out of the oven. We're going to let them cool for a minute or two before we're able to enjoy them.
