Amy Riolo: Hi! I am Amy Riolo with Harris Teeter. Don't be intimidated by the number of ingredients in this easy gluten-free recipe. Decadent Raspberry Brownies are definitely worth the effort. Let's begin.
The first thing we need to do is add our Gluten-Free Baking Mix, here I've got 2 cups. Here we have a cup of Maple Syrup. This is a great natural sweetener. I've got a half a cup Canola Oil, half a cup of Agave Nectar and we'll add a half a cup of Espresso, a cup of Good Quality Baking Cocoa, 1 1/2 tablespoons of Baking Powder. So now we can just stir within together as you would normal brownies. The first thing is to get all the ingredients incorporated. This is what our batter looks like when I'm finish stirring this. It's just nice, almost a little bit thinner than a pudding. It's exactly what we want.
Now we can stir in our chocolate chips and raspberries. And the only reason I leave these until the end is just so that they don't get broken up. Now we're ready for a pan. Just make sure you sprayed that bottom and the sides. Then I'll go ahead and add our batter. Then we can just tap that to smooth the top.
I've got my oven preheated 350 degrees and we can go ahead and bake for 30 minutes, or until the center is baked thorough. So our Raspberry Brownies have been out of the oven for about an hour. They are completely cold and we can go ahead and cut-and-serve them.
