Amy Riolo: This classic cooling Italian frozen ice or granita is made with only two ingredients, espresso and sugar.
To begin, combine two cups of hot espresso with a third-cup of granulated sugar in a large bowl. Whisk the two well until the sugar dissolves and then allow the mixture to cool to room temperature.
Did you know that it takes 40 perfectly roasted espresso beans to make one cup of espresso? This luscious recipe could also be made by replacing the espresso with a wide variety of fruit juices.
Next, transfer the mixture into ice cubes trays to freeze. Freeze for three to four hours or until the coffee is completely frozen. In the meantime, chill clear champagne fluids or other clear glasses.
Once you have got your frozen espresso, place it into a food processor and pulse on and off until the espresso resembles shaved ice. Lastly scoop the granita into the chilled cups and top them up with some whipped cream and a roasted espresso bean.
