Beth Hillson: Hello! My name is Beth Hillson and I am food editor at 'Living Without' magazine. Today we are going to make an easy delicious gluten free bread. But first, here are the basic ingredients you will need. We are starting with two cups of a commercial high protein blend, two teaspoons of xanthan gum, quarter of a cup milk powder, teaspoon of baking powder, teaspoon of salt and then I am going to blend my dry ingredients together. Then we are going to combine our wet ingredients, I have one cup of warm water and one egg plus one egg right, and beat it in so that my egg does not start to cuddle. Two tablespoons of olive oil, a teaspoon of cider vinegar, three tablespoons of honey. Now our wet ingredients are combined, I am going to start by adding my dry ingredients; we are going to add two and a quarter teaspoons of an active dry yeast, which is really one packet of yeast in your store. So we are going to blend it just a little bit in the kitchen-aid. I am going to add my wet ingredients. And this is going to produce a nice elastic doughy blend. Okay, now our dough is smooth and silky.
Now I have sprayed this pan, which is an 8x4 inch pan, with a little bit of pam, you could oil it if you don't have pam. But make sure you put something on there so it doesn't stick while it's baking. Now I am going to cover it up with plastic wrap and put it in a draft free area, for 30 to 40 minutes. Our bread has risen to the top of the pan and now we are ready to put it in the oven. I have preheated the oven to 375 and now this is going to bake for 45 minutes. Our bread is cooled and it's ready to serve. There is nothing more fragrant then freshly baked bread, enjoy!
