Amy Ariolo: Hi! I am Amy Ariolo with Harris Teeter. Everyone loves freshly baked cookies. Adding apricots into my gluten-free chocolate chip recipe adds a surprising twist. Let's begin.
The first thing we can do is add our butter into our mixture, you want to make sure and have nice room temperature butter. Then we'll go ahead and add a 1/4 cup of plan sugar and we could add a 1/2 a cup of brown sugar. Now we can turn this on medium and cream the ingredients together.
So now that our ingredients are completely mixed together, we can go ahead and add in the rest. The first thing I would like to add a 1/2 a teaspoon of vanilla, we also have a 1/2 of teaspoon of gluten-free baking soda, 1/2 teaspoon of salt, 1 egg and as soon as the egg is incorporated we can go ahead and add in our gluten-free baking mix this is 1 1/8 cup, let's turn your mixture up and notch to make sure everything is mix together.
So now there are cookies dough come together we can add in our apricots and chocolate chips. So one 1/2 cup of apricots and one 1/2 of chocolate chips, we can just stir everything together. And then we're ready to start putting our cookies on the trays. So what you need is a spoon, we're just going to take a little bit a teaspoon of full size and drop them right on to our baking sheets. Now it's a good time to preheat our oven to 350. And now we're going to put these into our preheated oven for 10-12 minutes.
So now about 10 minutes have passed and our cookies are finished baking, we will let these cool in the pan for about 10 minutes and then we can serve them. Here we have our chocolate chips and apricot cookies, a gluten-free way to satisfy a cookie craving. Enjoy!
