How To Make Grapefruit Avocado Salad

    Kimberly: Hi! I am Kimberly and I'm with TexaSweet Citrus Marketing. We work for the growers of Texas oranges and grapefruit. This is a Rio Star Grapefruit and it's only grown in Texas. It's a very red sweet variety of grapefruit that's perfect to use in all recipes from entres to desserts. Today I want to share with you a Rio Star Grapefruit and Avocado salad. So what we have here is the juice that's been reserved from sectioning two Rio Star Grapefruit. To that I'm going to add two teaspoons of fresh lemon juice. Then I'm going to add three-fourths of a teaspoon of salt, and I'm also going to add two teaspoons of fresh tarragon and a pinch of pepper.

    To that, we are going to stream in some extra virgin olive oil, and this is one fourth cup of olive oil, just whisk that in, gently fold in two Rio Star Grapefruit sectioned. Now this Rio Star Grapefruit is available October through May, so it's perfect to use almost all year round. And once you have each of the sections pretty well coated, we will take our avocado.

    Now this avocado has been sized in half and brushed with fresh lemon juice. So I will put some of that right on there. So this is a great lunch option, the sweet grapefruit is perfect paired with the creamy avocado. Enjoy!
