How To Make Grapefruit Quinoa Salad

    Alicia: Hi, I am Alicia with TexaSweet Citrus Marketing. We work with the growers of Texas grapefruit and oranges and today I'd like to talk with you about this very special grapefruit; it's called the Rio Star. It's grown in Texas and it's a very red sweet variety of grapefruit that's perfect for all types of recipes, from entres to desserts.

    Today, I'd like to share with you a very delicious recipe; it's the Rio Star Grapefruit and Quinoa salad. First, you want to take a vegetable peeler and peel off the outside of the grapefruit. You don't want to go all the way down to the white inside, just the skin on the outside. Set it aside and add to it eight slices of fresh ginger.

    Then you'll put that into a saucepan with one-fourth cup of olive oil. Bring that to a boil and as soon as it boils, take it off of the heat and let it sit aside for 30 minutes. Once you've done that, you'll want to strain out the grapefruit slices and the ginger slices so you just have your oil here.

    You'll want to start with three tablespoons of fresh squeezed grapefruit juice, two tablespoons of white wine vinegar, add two teaspoons of honey and you'll whisk that together with a little bit of salt and pepper to taste. So just stir this together, that's a little bit of your dressing for the start of the recipe.

    Then I'm going to add in my cup-and-half of quinoa and two carrots, add that in and one jalapeno pepper. If you like spice, go ahead and leave in the seeds. We went ahead and left them out today. Then I'm going to add in two tablespoons of cilantro, two green onions chopped up, one Texas orange and one Texas Rio Star grapefruit.

    So now that you have all of the ingredients here mixed together, now you can add in your infused olive oil and stir it altogether and you have this delicious and healthy Rio Star grapefruit and quinoa salad.
