How To Make Honey BBQ Chicken Bacon Dippers

    Chef Evelyn Paul: Hi! I'm Chef Evelyn Paul with Kroger. And today I'm making Honey Barbecue Chicken & Bacon Dippers. My oven is heating to 425 degrees and I'm going to start by prepping this cookie sheet with a little bit of nonstick cooking spray, and set that to the side while I'll make my filler.

    In this large bowl I'm going to add six ounces of Greek yogurt, a quarter cup of Honey Barbeque Sauce, have that nice sweet honey flavor and then we're going to blend that altogether.

    So next I have a rotisserie chicken that I've shredded and deboned, I'm going to add that to my yogurt and barbecue mixture.

    So I'm going to continue adding to my mix with a 11 ounce can of peppers and corn that I've drained. I'm going to add it to my chicken. It's beautiful colors. I'm going to continue to add flavor with a quarter cup of diced onion. You can use white onion; I like the red onion because I love the color.

    And last but not least, I'm going to add three ounces of smoky bacon bits to this mixture. I'm now going to mix this all together; I want all of the flavors blended together, the corn, the chicken, the yogurt, the Honey Barbecue Sauce, the onions.

    So now that my mixture is blended I'm going to assemble my dippers. I have 10 Fajita Sized Flour Tortillas, and then I also have 8 ounces of Monterey Jack Cheese that I've cut into ten strips.

    I'm going to start by taking a tortilla, putting it on my cookie sheet. I'm then going to place one strip of my Monterey Jack Cheese in the middle, my chicken mixture right on top of the cheese. Now I'm going to fold my tortilla wrap over my mixture and fold over with the seam side down.

    So now I'm going to finish this off by spraying some nonstick cooking spray on top, and then I'm going to finish stuffing and wrapping our remaining dippers. We're going to then bake this in the oven that's already set at 425 degrees for eight minutes and then we're going to flip it so we get another eight minutes on the other side, so we'll get this nice beautiful golden color.

    After eight minutes on each side I'm ready to serve the dippers. I'm serving them with some extra Honey Barbecue Sauce on the side; you can also serve them with sour cream, some ranch. All of these flavors go well with the Honey Barbecue Chicken and Bacon Dippers.
