How To Make Italian Chicken Pasta Bake

    Chef Evelyn Paul demonstrates how to make Italian food in a snap with this Italian chicken pasta bake recipe.

    Chef Evelyn Paul: Hi! I'm Chef Evelyn Paul with Kroger. Today, I'm taking you to Italy with an Italian Chicken and Pasta Bake. While my oven is heating to 400 degrees, I am going to spray a little nonstick cooking spray in my baking dish.

    So now I am going to heat my skillet to medium high and then I am going to coat it with some nonstick cooking spray.

    Next, I am going to add one quarter cup of diced white onion, two minced garlic cloves and then I am going to saut that for about a minute, just till the onions are translucent. We are getting that nice caramel color on the bottom of the pan.

    I am going to add two small diced Zucchinis to this mixture. I am also going to add 8 ounces of sliced white mushrooms and then I am going to saut this for five minutes. That way the onions and the garlic get to flavor these vegetables which typically on their own are pretty bland but they are absorbing all the yummy goodness of the garlic and the onions.

    I have two cans of 14 1/2 ounces of crushed tomatoes. I am going to pour that into my Zucchini and mushroom mix. To that I am going to add one tablespoon of Italian seasoning, half of a teaspoon of ground black pepper, half of a teaspoon of salt and just to round off all the flavors I am adding a half of teaspoon of sugar.

    Now I am going to mix this thoroughly so all the flavors are marrying together, they are talking to each other, they are saying we are going to be so good in the pasta and the chicken and the cheese hits this. I am going to now turn off my heat and then I am going to finish up this mixture with a rotisserie chicken that I've deboned and chopped roughly. I am going to add this to my vegetable and tomato mixture and then I have two cups of shredded Italian cheese. I am going to add one cup to my mixture with the chicken and the tomatoes and the vegetables and I am going to save the additional cup for my topping. Last, I am going to just combine the cheese and the tomato and the vegetables. So I am going to hold my vegetables here and then I am going to assemble my pasta bake. In this bowl I have nine ounces of uncooked chicken and bacon tortellini. I am going to pour this in my prepared baking dish and I am just going to use my spoon from the vegetables and make a nice even layer with the pasta. Perfect!

    I am going to pile all this good yummy chicken and vegetable mixture on top. This is going to be so flavorful. So now I am just going to flatten the top, nice and even, beautiful layer and now I am going to finish off my pasta bake by sprinkling the rest of the shredded Italian cheeses on top.

    So now I am going to bake this in my 400 degree oven for about 20 minutes or until the cheese is bubbling. So I have taken the pasta bake out of the oven and plated it and now I am dying to try it. I hope you enjoy yours as much as I will.
