Get ready by microwaving pasta sauce and water together in a bowl and stirring ricotta and shredded carrot together in a second bowl. Coat the inside of the slow cooker with non-stick spray. Then, spoon some of the sauce inside. Break 3 noodles into pieces and arrange in the sauce. Drop mounds of the ricotta mixture on top of the noodles. Then, sprinkle with shredded mozzarella and some more sauce. Repeat layering with the rest of the noodles, ricotta, sauce and mozzarella, then cover and cook at low setting for 3 hours.
When the lasagna is done, remove the ceramic liner from the cooker, and let it stand covered for 20 minutes before serving to give the casserole time to set so it's easier to serve.
