Alicia: Hi! I am Alicia with TexaSweet Citrus Marketing. We work with the growers of Texas grapefruit and oranges. Today, I would like to talk with you about the Rio Star Grapefruit. This is a very red sweet variety of grapefruit that's grown in Texas and it's perfect to incorporate into all types of recipes from entres to desserts.
Today I would like to share with you, the many Rio Star Grapefruit pie. It's actually a really traditional recipe of Rio Grande Valley where this grapefruit is grown. So first you want to start off with four Rio Star Grapefruit section. Put them into a bowl. Now, whenever you section these, do so over a paper towel and then lay them out on a paper towel, so that you can drain off some of the juice, they are not super juicy. Then, I want to fold those in with a cup of prepared strawberry glaze. You can find this in your grocery store in the freezer department and get them nicely covered, all of the grapefruit section is covered with the strawberry glaze and then you have your prepare mini-pie shells.
Now these are Graham cracker shells, but you can use whichever type of pie shell you prefer. They taste great with any type of pie shell. You spoon that in, so you get your grapefruit sections out in there. So you want to fill up your pie shells and then put them in the refrigerator until firm, and when you are ready to serve, you will dollop each one with whipped cream.
Now I will tell you, these are definitely kid approved super yummy and very nutritious. A half a grapefruit has only 60 calories and has 100% of the Vitamin C that you need. So not only is this treat healthy, but it's also delicious. So enjoy you Rio Star Grapefruit today.
