How To Make No-Knead Gluten Free Sandwich Bread

    Amy Riolo: Hi! I am Amy Riolo with Harris Teeter. Fresh, good quality bread is one of the things that people with celiac disease crave the most. My delicious gluten-free version will soon become a family favorite. So let's get started.

    The first thing I'm going to do is add my gluten-free baking mix right into my electric mixer. You can do this by hand, if you don't have it electric mixer. So this is 3 cups. Next I have 3 tablespoons of Sugar; 2 teaspoons of Yeast; 1 1/4 teaspoons of Salt and these are dry ingredients. We will just give these one quick mix.

    Now I can start adding in my Milk. We'll leave the machine running while we do this. Now we'll add in 4 tablespoons of Butter. Now that the Butter is incorporated, I can start adding in the Eggs.

    Now that everything is mixed together, I'm going to increase my speed and let this blend together for about 2 to 3 minutes. Three minutes have passed our batter is looking really beautiful. We can turn off our mixture.

    So now I'm just going to take this off and then we can scrape down the sides of the bowl if they've wizen off at all. And then I'm going to cote some plastic wrap with an oil spray. You can coat it with butter or whatever you prefer, just so that it will stick, because this batter is really going to rise a lot.

    I think we just cover a bowl. We'll let this rest for about one hour and when we come back, we'll turn it out into a pan. You look at the batter, you'll notice how all of the bubbles formed in the top. That means that it's wizen and it's the perfect place to turn it out.

    I'm just going to coat my baking pan with a little bit of spray. Then we can go ahead and deflate this with our spatula, but this really helps to distribute all of the gases and it helps for the bread to rise properly and have a really nice texture. So now we can turn it out right into our pan. Now I'm going to cover again with this Orion plastic wrap. Then we'll let it rest for another hour. During the final 15 minutes we can preheat the oven to 350 degrees. And then we're ready to bake our bread. You can see it's come to the surface. It's nice and Bubbly. So it's ready to bake. We're going to bake it for about 40 minutes until its nice and golden top and starts pull away from the sides.

    So our sandwich bread has been out of the oven for about an hour now. It's completely cold. We can go ahead and turn it out on to a plate. Here we have our gluten-free bread, which is a perfect choice for toast, snacks or sandwiches. Enjoy!
