Amy Riolo: Salmon slathered with tasty homemade pesto is delicious restaurant quality dish that can be made in just minutes at home.
To get started I'm going to preheat my oven to 425 degrees, then I'm going to grease my pan with a little bit of olive oil and then we'll start layering our salmon right on to our baking dish.
Salmon is a great protein choice for anybody who is health conscious; it's got a lot of nutrients and healthy rich Omega-3 fats. I'm just going to give another quick coat of olive oil right on top.
Here I've got three different spices that make a delicious mix; turmeric, ginger and cinnamon. We're just going to stir these up and put it right on to each piece of salmon and I'll just use my spoon to even it out right on top.
Now we can put these into the oven for 15 minutes. So now we can start making our pesto sauce. I am going to start by putting baby spinach, add my garlic, and then we'll add in our almonds. Now we can mix everything together. While we are mixing I'll go ahead and add a little bit of olive oil right in.
Now our pesto is ready to go. All we have to do is stir in our cheese. Now our salmon is ready to plate. We can top it with a dollop of pesto sauce and spread it to cover.
