How To Make Southwestern Chicken and Rice Bake

    Holly Clegg: Hi! I'm Holly Clegg for Kroger. Today, we're going to make a Southwest Chicken and Rice Bake. When I use those words in one recipe, chicken southwest and rice, my family comes running, and yours will too. But you know what I like best; it is less than 10 ingredients.

    We're going to start with one Rotisserie chicken, and you want to remove the skin and just coarsely chop it. Then we're going to take one 16 ounce jar of salsa. Salsa is a great shortcut. Actually did you know that one half a cup of salsa equals one serving of vegetables, and then you don't have to chop all the vegetables, so it's so good to use.

    We have one 11 ounce can of corn and peppers, you always want to drain it, and then black beans. Oh! I think black beans are just a nutritional bargain. Inexpensive, full of fiber, protein, but you always want to remember to rinse and drain your beans before you use it. That will get rid of some of the sodium. And then enchilada sauce, I've two 10 ounce cans of enchilada sauce. I love enchilada sauce; it gives it that southwestern flavor. Not too much, just the perfect amount, but you do want to always remember to buy the mild. One time I bought the hot. Oh my gosh! It is so hot.

    And then Instant Rice. If you've never used Instant Rice, talk about a timesaver. This recipe is so easy; it's really a family favorite. So I think you're just going to love it.

    Now we've an eight ounce package of Mexican Blend Cheese. But we're going to divide it in two half. We're going to put one cup now, then we're going to top it with the other cup. I used to reduce that cheese, because really it's a little better for you and it doesn't make any different. Anytime we can make something a little healthier. We're just going to mix all these ingredients together. It's party, it's a one dish. To me it's a perfect family favorite.

    Now we take our baking dish and you want to coat it with nonstick cooking spray, and then we're just going to add this mix and then remember, that last cup of cheese, this is our last cup of Mexican Blend Cheese. Um, I can already smell it. And my friend's two year old ate this with the black beans, so it's a great way to get some nutrition into your family's dinner.

    You want to bake it at 400 for about 20/25 minutes just until the rice cooks, and then you have this wonderful savory one dish casserole. So it's easy on you and your family is going to love it. So let's go pop it in the oven.
