Amy Riolo: Rubbing wild salmon with spices makes for an easy, impressive, and delicious main course. The first thing we need to do so is make our spice mix. We'll mix together our ginger, turmeric, and cinnamon. Now I'm going to add in some salt and pepper, and now we need to make a vinaigrette for our salmon.
So I'm going to start by adding in our acid or in this case our lemon juice. Then I am going to whisk in the olive oil. When these become nice and emulsified, we can start coating our salmon. The lemon juice and olive oil give us a nice bright flavor and help us to coat our salmon before adding the spice mixture.
We want to make sure that we're placing these into the pan with the skin down. Now that our salmon is ready to go, we can add our spices. Then I'm just going to use the back of my spoon to rub this in. Now we've got our oven preheated to about 425 degrees, and these are going to bake for about 15 to 20 minutes or just until the centers are cooked through.
Now that our salmon's baking, we can get started on our Lemon Cilantro Dipping Sauce. I'm going to start by adding a Greek-style yogurt. Now I'm going to add the cilantro, and then we have our lemon zest, then we'll add our garlic, then some salt to taste. Let's whip up all of these up together, and there we have our Lemon Cilantro Dipping Sauce.
So our salmon has finished baking. We can go ahead and put it on our bed of fresh greens. We're using mixed baby greens for our bed for the Salmon, but you can use whatever greens you like.
