Amy Riolo: Split Pea Soup is a perennial favorite. This vegan version is as delicious as it is healthy. Let's get started by heating up some olive oil in our pan. Now that our olive oil is hot, we add in or onion, 3 cloves of chopped garlic and 1 bay leaf. We will just stir these for a minute and let them saut about 5 minutes or until they get nice and tender. So now our onions and garlic have finish saut and we can add in our other vegetables. Here I have 3 diced potato, 3 carrots, and 3 celery stalks. Now I will add in my split peas. And these are dry split peas that I've actually soaked in boiling water for one hour, and a teaspoon 1/2 of salt. Now I can add my thyme, you can use fresh or dried thyme if you life and fresh parsley. And then I am going to add 71/2 cups of water. Now we'll increase our heat and bring this to boil. So now our soup is boiling we could go head and cover it. I'm just going to turn it down to low heat and we will let this simmer for an hour, just until all of the vegetables and beans or cooked through. So now when hour past and our split pea soup is finished cooking, you could see it's got nice thick and really come together very well.
The only thing that we have to do is discard or bay leaf. So here we have our vegan Split Pea Soup and easy and nutritious meal in a bowl. Enjoy!
