Amy Riolo: Increasingly popular sweet potato fries taste as good as they are healthy. Let's get started by turning our oven to 425 degrees, and then, I'm going to cut these into wedges. You will want to work with about maybe an inch to a half-an-inch, just make sure that they are all pretty much even.
Sweet potatoes are great for people with diabetes, because they help to keep glucose levels even. So, I'm going to coat the potatoes with olive oil. Olive oil has a lot of healthy fats, and by using just a little bit and baking them instead of frying them, you get more flavor and less fat.
I'm going to be using cinnamon and ginger because of their anti-inflammatory properties. We'll finish off with sprinkle of salt and pepper. You can mix this all up with your hands, but I've got a pastry brush here. So, I'm just going to go ahead and make sure that my olive oil and all of my spices are incorporated on each of these sweet potato pieces.
So now we can put these into our oven and bake them for about 30 minutes or just until they are tender.
