Stephanie Barlow: Hi! I'm Stephanie Barlow with the National Watermelon Promotion Board. I'm going to show you how to make some fantastic watermelon recipes for kids. You can also bring your kids into kitchen for this one, because it's really fun to play with your food. Today we're going to watermelon cupcakes and all you need is a slab a watermelon, a round shape cookie cutter, or drinking glass that's about the same size as your cupcake, some icing, but you could also use a thick yogurt. If you don't have one of these frosting bags you can simply cut the corner of a zip block bag and squeeze on and sprinkles of your choice. Lastly, of course, we need cupcake liners. For these recipes I prefer use the silicone cupcake liners that you could find at the store. They hold on the watermelon juice and they provide a good sturdy base. But if you don't have these paper cupcake liners then a cupcake tin works just fine.
This is such in easy recipe. All you have to do is grab your cookie cutter, go down, cut out your circle, hunt it through, and then place that in your liner, grab your favorite frosting. I'm going to choose strawberry and give it a nice swirl.
Last but not least, we top with are favorite sprinkles. You can also use toasted coconut, chocolate sprinkles, mini chocolate chips, whatever you like. There you have a great watermelon cupcake.
