Amy Riolo: You will be surprised that how easy is to make my white bean and tomato soup. We are going to start by making a traditional homemade tomato sauce and then finish it off by adding in cannelloni beans and orzo pasta. So let's begin by heating up our olive oil. As soon as my olive oil is hot, I am going to go ahead and add the garlic in. So as soon as the garlic begins to release it's aroma before it turns brown, we can add in our tomato. Then we are going to add a little bit of salt and a little bit of freshly ground black pepper. Now I am going to add in my Parsley. So now that our sauce is been simmering for 15 minutes, it's really condensed a little bit and the flavors have intensified, so we can go ahead and add in our soup ingredients. So the first thing I am going to do is add in my stock, then I am going to add in our cannelloni beans, we will bring the mixture to a boil. So now that our stock and tomato sauce are boiling, we can add in our orzo pasta. We are going to turn this down to simmer, cover it and let it cook for about 15 minutes, just until the pasta is cooked. I like to finish this off by garnishing it with some fresh Romano cheese.
