    Jim Davis: Hi! Chef Jim Davis here for Harris Teeter. I am going to show you now how to open a coconut. As you are well aware coconuts are very hard and see these little eyes, if you want you can take a drill -- drill bit, drill that out to get the water out.

    We are going to do it the old-fashioned way. We are going to take the back of a mallet and we just keep cracking at the coconut until it splits along the line. Sometimes it has to take a little more encouragement.

    Got the milk out of it, the water out of it, that's coconut water. The milk comes from the flesh. Hey we have got our coconut peeled and out of the hard shell. Now we are going to take, remove it from the hard shell by putting a knife in and just pulling it away like this.

    We can get it out, then we take a peeler or a knife, we can peel it this way with our peeler and there we have nice, clean, fresh coconut.

    Now we have also maintained our coconut water, we have kept it here in the bowl that we cracked our coconut over, and we have now peeled it and we are ready to shred it and eat it. If you want to make coconut milk, you need to shred the coconut, put it into a dish towel, twist it up tight and just keep twisting it tight and keep squeezing the milk out of the shredded coconut.

    Remember this is coconut water, this you drink straight out of the coconut. Coconut milk come from the meat of the coconut and that's how you peel and prepare a coconut.
