Jim Davis: Hi there, Chef Jim Davis here for Harris Teeter. I'm going to show you now how to square off a potato. That's the first step in preparing several other methods of cooking.
What we're going to do first is we're going to cut of one side, with our chef's knife, cut off the side of the potato. Get a flat side. Take another flat side and then parallel an exact cut on the other side. We'll cut off the end. Then we'll cut off the other end. We lay it down and we square it off that way. There is a squared potato cut. Next, I'm going to show you how to chop and mince with a chef's knife.
