Davide Megna: Hello, I am Davide Megna from Amici Miei Ristorante in Rockville, Maryland. Today I am showing you how to make Lasagna and right now we are going to prepare out Bolognese sauce. We start with chopping half of a big onion, I like to chop it in big pieces, some celery, some carrot about half of carrot and a couple of cloves of garlic, fresh garlic. We are going to put all these vegetables inside a food processor and we are going to leave the processor on until we obtain a fine chopped vegetables. I am going to remove the vegetable from the side of the bowl, so that everything gets chopped the same way.
Okay, now we have chopped our vegetables and then I am going to make a little bunch of sage and rosemary. I am going to tie it altogether with a regular twine. Okay, now we have our bunch of herbs, we are going to turn our pot on for cooking our sauce. I am going to pour some extra virgin olive oil into the pot, make it warm up a little bit. Okay we are pouring all of our vegetables inside the pot, start stirring a little bit and fry the vegetables for a couple of minutes. After that we are going to add our ground beef for the Bolognese, I choose ground beef, that is, with a percentage of 80% and 20%, we use about two pounds of ground beef, to two pounds and a half ground beef.
I am going to let it cook it until it gets brown. And now that we have finally browned our meat, we are going to pour a glass of red wine, we can use any table red wine. We are going to let it evaporate. Okay, once the red wine is completely evaporated we are going to add our bunch of herbs and we are going to pour in and cover with Italian peeled tomatoes. And after that we are going to let it simmer for about an hour to an hour-and-a-half and then after we simmer for an hour, an hour-and-a-half, we are going to add salt and pepper to our sauce and then it will be ready for making our Lasagna and that is how you make a Bolognese sauce.
