    Roxanne Moore from Sodexo, and helper, Lydia, demonstrate how to make healthy yogurt bran muffins for a quick snack or filling breakfast.

    Roxanne Moore: Hey! I am Roxanne Moore with Sodexo and with me today is Lydia, and Lydia is an athlete. Lydia, what sports do you like to play?

    Lydia: I play lacrosse and soccer.

    Roxanne Moore: So as an athlete I am sure can work up an appetite.

    Lydia: Yeah, I get really hungry sometimes.

    Roxanne Moore: Well we are going to help Lydia out as well as other athletes like Lydia because we are going to show you how to make a yogurt bran muffin, and this muffin can be a great breakfast item or it can also be a fantastic performance snack. So Lydia, I understand that there are some really special ingredients in this muffin.

    Lydia: Cereal and fruits.

    Roxanne Moore: Right and a cereal and fruit contain an important nutrient called fiber, you see any fiber everyday because it helps to keep your gut healthy and if you are eating whole grains and fruits and vegetables you will be getting plenty of fiber in your diet everyday.

    Now I will get it started by preheating the oven to 400 degrees, what's next?

    Lydia: Place paper baking cups in a muffin pan, then pour 1 cup high-fiber bran cereal in a re-sealable plastic bag. Seal the bag and then crush the cereal with a rolling pin, this is my favorite part.

    In a medium bowl stirred together one beaten egg, a 1/4 cup applesauce and 12 ounces of fat free vanilla yogurt, then add the cereal, 1 1/2 cups flour, a-third cup of packed brown sugar, 1 1/4 teaspoon of baking soda and half a teaspoon salt, stir this mixture until the dry ingredients are moistened. Then gently stirring 1/2 a cup of berries, you can use whatever berries you like, I wanted to use raspberries. Then divide the batter evenly among the muffin cups filling each three quarters of the way waffle.

    Roxanne Moore: I'll place this in the oven, how long should they bake for?

    Lydia: About 18 to 20 minutes or until golden brown.
