Amy Riolo: Hi! I am Chef Amy Riolo. Today, we are making Caprese Style Chicken Breasts with a Mixed Pepper Medley. They are both ready and I am going to show you how to plate them up.
So this is what our mixed pepper medley looks like when it is ready. You can see how nice and soft the peppers have gotten; they have got a little bit of chard on the side, this is exactly how you want them to look. They have really cooked down in terms of volume. So now what we can do is just take our plate and we are going to use our peppers, this little medley as a bed for our Caprese Style Chicken Breast because their color is so nice and also the flavor when you put the chicken on top. And the chicken is literally going to be enveloped in between the peppers on the bottom and the tomatoes and the mozzarella on top. So it is going to both look and taste delicious.
Now if you can see the bottom of our pan here where we made our chicken in the oven, as that is cooked some of the chicken broth has condensed with our herbs and with the tomatoes and with the garlic and we have this nice brown velvety sauce. So I am going to take that sauce and I am just going to use it to top the very top portion of our chicken breast. And there we have it. So I hope you enjoy this delicious and nutritious meal.
