Putting them in cans or bags or freezing them doesnt take the nutrient content out which is great because they can be a lot more convenient in this form. They have a longer shelf life and you can keep a can of green beans a lot longer than you can keep fresh green beans. So this might just make it easier for you to fit in fruits and vegetables. In fact, some fruits and vegetables for example, tomatoes actually have increased nutrient content after for example, the canning process.
