Slow Cooker BBQ Chicken

    Try this heart healthy slow cooker chicken recipe for dinner tonight!

    Female Speaker: Once summer time hits, all I want to eat is barbecue and I know I'm not alone. Today, I have a fantastic barbecue chicken recipe that you can enjoy all year long because its a heart healthy and made for a slow cooker.

    You know, many of the store-bought barbecue sauces have a lot of added sugar, salt and other undesirable additives; but when you make your own, you are in control of which ingredients go in, plus lets face it. It tastes so much better and it saves money too. I can't wait to show you this recipe, so lets get to it.

    I am going to start with one 14-1/2 ounce can of no salt-added tomato sauce. You could also use tomato puree or crushed tomatoes, just make sure you get a low sodium or no salt-added version.

    So next I want to add 1 tablespoon of brown sugar, this will give it a little bit of a sweet flavor to our tangy sauce. You can also omit the sugar or flavor with a no calorie sweetener.

    Now, I'm adding one-half cup of cider vinegar, and for some extra tang 1 tablespoon of yellow mustard.

    Next is a half teaspoon of garlic powder, one-half teaspoon of onion powder and a half teaspoon of chili powder and for just a hint of spicy heat, a teaspoon of cayenne powder; then a teaspoon of black pepper, a teaspoon of cinnamon, and also a half teaspoon of paprika.

    Now I'll just whisk that together so this barbecue sauce is fantastic for either chicken or pork. You can use one pound of boneless skinless chicken breasts with all visible fat removed or chicken tenderloin. If you want pork, you can use one pound of pork loin, tenderloin or center loin.

    These days pork can really be a lean and heart healthy choice if you stick to the loin type cuts and also remove any fat that you see when you get at home.

    So into the slow cooker goes my 1 pound of chicken breast, then I am going to pour 1 cup of water over the top, and this is going to be followed by our barbecue sauce.

    Now Ill cover that and Ill let it cook over a low setting for 8 to 10 hours or you could cook it on high for 3 to 4 hours if you wish. The chicken will break apart easily with a fork once it is cooked. So here is our finished slow cooker barbecue chicken and it looks and smells amazing.

    You could also serve this on whole wheat buns for sandwiches or with a side of Pinto Beans Asian Cole Slaw; a nice cool contrast to the heat of the dish.
