Sweet Potato Bread Recipe

    Amy Riolo: Hi! I am Amy Riolo with Bruce's Yams. And today we are going to be making a scrumptious sweet potato bread, perfect for the fall or any season. The sweet potatoes give this bread a moist texture and they are a fantastic super food.

    Since we are using canned sweet potatoes it's not just healthy, it's quick to make. First combine 11/4 cups white sugar, 2 eggs, and a 1/2 cup of vegetable oil beating well. In a separate bowl combine 13/4 cups all-purpose flour, 1 teaspoon baking soda, 1/4 teaspoon salt, 1/2 ground cinnamon, 1/4 teaspoon ground nutmeg. Stir your flour mixture into the egg mixture alternately with 1/3 cup water.

    Once combined stir in 11/2 15 oz cans of Yams drained and 1/2 cup chopped pecans. Pour the batter into a greased 9x5 inch loaf pan and bake it at 350 degrees Fahrenheit for 50 minutes or until an inserted toothpick comes out clean.
