Chef Amy Riolo with Bruce’s Yams demonstrates how to make sweet potato bread, a holiday favorite and any-time-of-year breakfast treat.

Amy Riolo: Hi! I am Amy Riolo with Bruce's Yams. And today we are going to be making a scrumptious sweet potato bread, perfect for the fall or any season. The sweet potatoes give this bread a moist texture and they are a fantastic super food.

Since we are using canned sweet potatoes it's not just healthy, it's quick to make. First combine 11/4 cups white sugar, 2 eggs, and a 1/2 cup of vegetable oil beating well. In a separate bowl combine 13/4 cups all-purpose flour, 1 teaspoon baking soda, 1/4 teaspoon salt, 1/2 ground cinnamon, 1/4 teaspoon ground nutmeg. Stir your flour mixture into the egg mixture alternately with 1/3 cup water.

Once combined stir in 11/2 15 oz cans of Yams drained and 1/2 cup chopped pecans. Pour the batter into a greased 9x5 inch loaf pan and bake it at 350 degrees Fahrenheit for 50 minutes or until an inserted toothpick comes out clean.

Try this sweet potato bread recipe for holiday brunches, or for a great on the go breakfast. Enjoy!
