Thanksgiving Leftover Recipes – Quiche

    Jim Davis, chef instructor at Bryan’s Kitchen demonstrates how to use Thanksgiving Leftovers to create a new meal after the holiday including quiche.

    Jim Davis: Hi! I am Jim Davis, a chef instructor at Bryan's Kitchen. Today we are going to be talking about Thanksgiving Leftovers and right now we are going to do a wonderful and tasty Thanksgiving Quiche.

    Our ingredients are four eggs. Always remember when you are breaking an egg, break it on a flat surface so you dont push eggshell into the egg itself. Then we are going to be using half-and-half, Swiss cheese, French-fried onions, broccoli, leftover turkey, leftover ham, salt and pepper and shredded cheese. So let's get started. First, we are going to mix together our four eggs, just lightly. They dont have to be whipped apart. Then we are going to add for the four eggs, a cup and a half of half-and-half and mix that together with a little bit of salt and little bit of pepper. Now we are going to do this the easy way and use a pre-purchased, pre-made pie crust from the supermarket. If you are a pastry cook and you want to make your own pie shell, thats absolutely marvellous but we are going to use a pre-made pie shell that we buy at the super market. We are going to start by adding a little bit of chopped ham to our pie shell. Just a little bit, maybe a little bit more than that. A bit of ham and a little bit of chopped turkey, thats the base for our Quiche. Then we are going to add broccoli, this is just cooked broccoli thats leftover from Thanksgiving dinner. Thats a wonderful Quiche. And then about a cup and a half of grated or diced Swiss cheese. You can use either Swiss or Gruyre, both work equally well. We want to kind of level it up. Then we add our custard, just enough custard to cover all the ingredients and then sprinkling of shredded cheese and you can use Parmesan, you could use Cheddar, you could use any kind of Swiss. Use any kind of shredded cheese that you happen to have, will work fine. And then this is going to go into an oven and bake at 375 degrees until it gets a nice golden brown on top and the crust has set and the top has set. Our Quiche will bake 40 minutes in a 375 degree oven.
