Chris Koetke: Hi! I am Chef Chris Koetke, and today we are going to make delicious chocolate pudding with tofu. One of the great things about this recipe is that we are going to add some healthy protein into this very hard healthy dessert. The tofu we are going to use is Silken Tofu, because we are going to puree the tofu up. But, please be aware, there are different types of silken tofu, different texture.
So for instance, right over here this is soft Silken Tofu, and this one over here is a firm Silken Tofu.
Now for this recipe what we are going to be using is the firm Silken Tofu because we want the pudding to kind of solidify and set up once weve prepared it. So, this is how we do it, its really, really easy.
I am going to start with 16 ounces of that firm Silken Tofu along with 1 cup of powdered sugar and a cup of cocoa powder, a teaspoon of vanilla extract, about a tablespoon of corn syrup, and thats it, all I have to do now is just put it on top of the blender, put the lid on, and puree it up.
Now this is ready to go, and also delicious. Now there is a lot of different things that she can do with this. So for instance, one of my favorites is, just to buy some of these little tiny graham cracker crusts, take this mixture and just pour it into each one of these little molds, oh thats beautiful, then you take that and put it in the refrigerator until it solidifies or you can sort of put them into some pretty glasses like these right over here, feel free to garnish it however you want, maybe some raspberries or strawberries, a little mint leaf on top, and there you have it, delicious chocolate pudding made with tofu.
